You are correct with your observation regarding mouth color. White mouth/gums is a trout. Kokanee and all other salmon will have grey or black in their mouths and/or on their gums. I helped out on shore this year, the official results will be posted on the PSA Renton Chapter's website. Winning fish weighed in at 3 lbs 2 oz. Kokanee were included in this year's weigh in and there were some really stout fish!

I think flowing lake is probably the closest lake that meets your criteria, but if you are going that far might as well hit Stevens. Perch are alway a good bet for kids and should be on the bite in Sammamish.

Almost forgot, get some bait pins and use them! I hang 2 to 4 perch/squawfish/suckers/sandabs/etc in each pot along with some bait in a box. Feeding crab won't try to leave the trap and also attract more crab than just the scent from your bait.

It does effect position of the board a bit, but speed has more of an effect on position and pull.
