What do you do with imitation crab?

So, last Sunday night we were at the grocery store looking for something to make for dinner and my kids wanted to get some imitation crab (the pollock stuff) to snack on. We like to squeeze lemon on it and just snack on it. I decided to try to get creative and I sliced some mushrooms and onions in some garlic butter and them mixed the imitation crab with it. I added some creole seasoning and some cayenne pepper as well. When it was nice and hot, I grated some pepper jack cheese over the top and threw it in the microwave to completely melt the cheese. Threw some jasmine thai rice in the rice cooker and when it was all said and done, there was nothing left to put in the fridge, It was absolutely delicious. THat imitation crab was so good. Got me thinking, does anyone do anything fancy with the imitation crab? I am really curious now!!!

Most "California Rolls" you see at QFC, Safeway, etc. typically have that imitation meat in their rolls....

One way to use it is to stuff Sole with it and bake it with a nice Holladaise sauce over it.Take sole and clean it and lay flat.Dice some onions or shallots,some garlic and the crabmeat.Dab some on the filet and roll it like a roll.Place in a greased pan and bake. Season the mixture with some Old Bay Seasoning .
When youre up to your rear end in alligators,its hard to remember that the initial plan was to drain the swamp.

Mix w/ mayo, chopped onions, some worcestershire sauce, grated cheddar cheese- put on english muffin and broil in oven til bubbly and slightly browned. but nothing like using dungeness though.

I use it in salads daily. Its low calorie low fat. Costco has it in 4-packs very cheap.

Jens, that sounds delicious. That is what I am going to do for this Sunday's football games. Usually the other thing we do with it is to put it in ceviche. Take bay shrimp, and the crabmeat, dice onions, cucumbers, tomatoes, a couple of jalepenos, and cilantro and then mix them all together in large bowl. Squeeze two lemons and add a 12 oz. can of spicy v-8. Squirt in Tapatio hot sauce and salt to taste and serve with your favorite tortilla chips. It is another good Sunday football snack.

i mixed it up with cream cheese and stuff them into wonton wrappers and deep fry them.

Mmmmmm.... I can taste it now.

Since this thread started, I sugested to my better half to swap out the chicken with krab in her chicken salad... we both love it.
