The Magic Ratio

Hi all, spring's around the corner so I wanted to share a good recipe with you to try on some screamingly fresh fish. It's very simple, anyone can do it. The ratio is 2 parts extra virgin olive oil to 1 part lemon juice whipped together with a fork. I prefer fresh squeezed lemon juice but you can cheat and use the bottled stuff if you'd like. once you've combined that the rest is up to your imagination. you can flavor the mixture with anything you like. I add chopped garlic and oregano myself. You can sift around in the spice cupboard and find whatever herbs you have to come up with your own flavors, there's no wrong way to do it! Just add a little at a time and taste it as you go. Also the ratio can be adjusted to your tastes, 2 to 1 is just a starting point, more or less lemon juice can be added to your liking. Let it sit at room temperature for an hour or so before serving to let the flavors come together, whisk it together again then spoon it over your fresh cooked fish. It adds a nice accent without hiding the flavor of the fish.
I don't recommend this for fish that's been in the freezer for a while, I only use it on fresh caught fish as it strongly enhances the flavor of the meat. I can't think of any fish it wouldn't work on. It's also a good salad dressing! Refrigerate any unused portion but be sure to let it come to room temperature before using again (extra virgin olive oil solidifies like butter when refrigerated). Give it a shot!

dill
