I got my Baby Backs out this am and started getting the ribs dressed. First I take off that outer membrane so my rub really penetrates the meat.After that I coat the ribs generously with rub and massage it in.Then I wrap them in a couple plastic bags for a 10-24 hours. Get the Traeger ready for 1 of the racks and a steelie I picked up before I got the crud. The other two racks will go on the wood fire.For the Traeger I'll use Apple pellets,for the wood fired I'll use a combo of Apple and Cherry. My rub is as follows.
3/4 cup paprika
1/4 cup ground black pepper
1/4 cup salt
1/4 cup sugar
2 tblspns chilli powder
2 tblspns garlic powder (granulated)
2 tblspns onion powder
2 teaspoons cayenne
Its an excellent rub combo for beef and or pork.I use a lil more cayenne and add some chilli powder also. I tend to like my ribs more picante.Try this on a brisket .

just did some bone in country ribs same rub - the onion powder, didnt have any.... stuffed shrooms and bacon wrapped poppers. smoked beans and slaw . im stuffed
