Home Made Turkey Sausage

After a year of eating healthy I have come up with some creative ways to use ground turkey which I eat allot of. You can only eat turkey burgers (minus the bun) and chicken breasts for so long, before you get tired of the same old thing. Poultry is the protein staple in my diet that accompanies my salads and steamed veggies which I eat at most meals.

So about 3 months ago I decided to make homemade sausage using the 7% lean ground turkey I had been eating for the last 9 months. I needed a change and thought turkey sausage would be a nice alternative. So I acquired some sausage mixes (German, polish, breakfast, and bratwurst) made by Zach’s Spice Company out of Deer Park Texas, and bought some sausage casings from a local meat market and I was ready to go. The spice package called for 25 pounds of ground turkey which for me is no big deal because I eat so much of it. I buy my fresh ground turkey from Costco for 2.29 per pound which is unbeatable. Most grocery stores sell it for between 3.99 and 5.99 per pound.

This is way too simple:

1. Mix the seasonings with the 25 pounds of ground turkey. Mix it well.
2. Soak the casings in warm water for 30 minutes or whatever amount of time it says on the package.
3. Feed the casings onto the sausage attachment and tie a knot in the end.
4. Feed the meat mixture through the attachment, filling the casing to your desired length.
5. Twist the sausage after it is filled to the desired size, and the next one will form. Each casing will make 10 or 12 sausage.
• To insure the sausage won’t be dry after grilling, I add 1 can of chicken broth to the 25 pounds of turkey.

I food saver these delicious sausage and freeze them until ready to eat. Each sausage is about 150 calories and is obviously 7% lean. There is some sugar in the spices but I have found that very moderate amounts of sugar haven’t affected my weight loss success. NOTE: Sugar lowers and can stop your metabolic rate so if keeping your metabolism up is important to you, stay away from it whenever possible. I use a kitchen aid mixer with a sausage attachment to make the sausage.

I have made the German and bratwurst sausage so far and both were better than any store bought sausage I have ever eaten, plus I know it’s super lean because I made it myself and I know what is in it. You can also buy the spice packages in a kit at the sportsman’s warehouse. I did make a batch using the kit and found it a little salty.

The sausage seasoning packages are 4.50 each. One package makes 25 pounds of sausage. Casings to make 25 pounds of sausage are 6.00.
