END OF GARDEN SOUP

I make a soup right about this time of season.I boil down large ammts of my tomatoe along with an onion or two,leeks,garlic,zuccinis,parsley and or everything else of the plants im plucking out to throw in the yard waste.I boil it till its a soupy concoction.Then I run it through a food mill. This gets rid of skins and some seeds.I return this to a large pot and season it to taste.I food mill it once more trying to get rid of the rest of the seeds and skins. This renders down to a beautiful tomatoe soup.If you want keep boiling it down to tomatoe sauce or what I did is make soup.I pack in hot sterilized jars and put them away.Its a great way to use up the veggies that were left over from the garden plus you get a great fresh homemade soup with no preservatives or ingredients you cant pronounce.It dosent have a real long shelf life but it goes rather quickly .It makes a great thermous soup for those colder days fishing soon to come.I dont have a real recipe for it .Its just a do as it goes.Some veggies need more seasoning then others. Try it ,youll be pleasently suprised.
