I've been experimenting with Cash N Carry's pork loin pieces. Its a very inexpensive cut of pork with very lil marbeling helping keep the calories down.I start by cutting the loin pieces into stew meat size bits.At the same time I'm boiling my large pot with whole wheat penne pasta.Only cook pasta till its alDente.(chewy but softened)I put in a baking dish the pasta ,then pork loin pieces .I cover this with a bed of sliced fresh onions,some shrooms,and some med hot peppers.I then cover it with homemade pesto and drizzle in a half cup of a white wine. Bake at 350 on mid rack for about 1 hour.(usually I take my walk at this time). When I get home its ready and delicious.I had a pic of it but I accidently deleted it Sorry!!!
Instead of pasta you can use fresh sliced potatoes.I have that and a lil salad and I'm good to go.
