Strange looking area on new salmon fillet
So I just did my very first ever fillet of a fish. An acquaintance gave me a sockeye whole fish, 5-6 lb. ish. I got a fillet knife and read the instruction on filleting, from Salmon University. Of course I butchered the fish, (this will take some practice)
However as I got the fillets off I noticed that on one side of the fish only, there was this what looked like a "Rotten" spot which was 2x3 inches in various directions. The meat was mush in this area, and it was almost black. It was not a tumor, I am sure of that. It was pretty much midline from the anterior to posterior surface of the fish, and deep in along the backbone, however only on one side of the fish, so on one fillet not the other. The fish came to me from a seafood manager friend, native sockeye, I can't say how it was bled originaly, but I froze it the day I got it, and it came to me fresh.
What do you think, is this normal to see? Is it like a hemorage of sorts?

just cut out the bad spot, and eat everything else.
nothing to lose sleep over

I would cut the bad spot out and eat the rest. I have come across a few something like that. I thought it was an injury that caused a bruise.

I'd bet on a bruise also.

If it looks like the Virgin Mary you could put it up on EBAY and retire! :money:
I'm thinking some kind of bruise too - maybe freezing turned it black.
I'm right there with you on the filleting, those that know how make it look so easy:-k

I fish not because I regard fishing as being terribly important, but because I suspect that so many of the other concerns of men are equally unimportant, and not nearly so much fun. ~ John Volker

On filleting I do one side like a pro but the other I butcher. The longer the fish the worst it is.
