Any salsa canning going on out there?

Tomatos and jalapenos are finally getting done in the Yakima Valley. My wife and I will be canning salsa all weekend. I am going to try to sneak away to Potholes for some crappie fishing on Sunday. Does anyone can any salsa? We toast the jalepenos and tomatos, boil and peel the tomatoes, blend the jalepenos,mix in large cooking pan and boil, press tomatos so there is minimal lumps and let boil for 15 minutes or so. Season with garlic and salt and then can in prepared jars. We will usually make 6-8 dozen. I usually make extra for some horse trading. Nothing like homemade salsa in the winter time on eggs, tacos, with chips, or anything else that is salsa-worthy!!

I did some salsa but only for personal use.I made tomatoe sauce with all my tomatoes.My salsa is almost the same as my sauce but I grow Tomatillos at home for my Salsa Verde.I've been getting great peppers from Yakama.Tomatoes have a lil bit too much sugar for me so I'only made a lil.
When youre up to your rear end in alligators,its hard to remember that the initial plan was to drain the swamp.
