What are you going to have and how are you going to prepare it?
This year I am going to smoke a turkey and the kids are going to prepare the rest of the meal (with supervision of course). The wife gets the day off from cooking and cleaning.

A can of cranberry sauce and pizza. M&Ms and Skittles for desert. Maybe ice cream after shoveling rocks a few times during the day.

I get to fish the Lewis River North Fork in the early morning. The ladies do all the work while us guys get to tip a few back and watch some football. I smoked a couple King filets last night to munch on. I did the dry brine and am lovin that recipe.

Happy turkey day to all the WL.COM members ! We may not have all of the items on our table we desire ! We may not have the chairs that surround the table filled with ALL of our loved ones ! Plan on fishing the Wenatchee for a few hours. Prepare a Steelhead for an appetizer. Then its on... Stuffing the belly and feeling like crap. Maybe throw in a few Crown & Cokes into the system too! But all in all we have a new nephew (first one for the family) this thanksgiving and lots of stories to tell!

Happy Thanksgiving everyone. I am definitely looking forward to turkey dinner (oven baked) with all the trimmings. I can't wait to have mashed potatoes, sweet potatoes, corn, and Hawaiian sweet bread rolls. I also love munchin on the black olives and sweet pickles that garnish the table. Desert is a pumpkin pie with cool whip topping and my wife also made a chocolate cream pie. Lots of calories tomorrow, then back to eating reality.

Super Smoked Turkey Legs
8
1 gallon
1 cup
1/2 cup
2 Tbs
1 Tbs
1 Tbs
1 Tbs
1 Tbs
1 tsp
1 tsp turkey legs
water
kosher salt
white sugar
onion powder
garlic powder
chili powder
paprika
black pepper
sage
cumin

How to Smoke Turkey
Rinse and drain the turkey legs. Add the remaining ingredients to a large pan and bring to a boil. Take off heat, cover, and allow to cool to room temperature. Pour the brine into your brining container and place it in the fridge to cool. The brine needs to be between 35 and 40 degrees Fahrenheit in order to safely and effectively brine the drumsticks.
Drop the legs into the brine, and soak them for four to six hours. Remove them, rinse well, and drain. Dry them off with paper towels to ready them for the wet rub.
Here's the Wet Rub Recipe
Turkey Leg Rub
3 Tbs
2 Tbs
1 Tbs
1 Tsp
1 Tsp
1/2 Tsp
3 Tbs onion powder
paprika
garlic powder
black pepper
cumin
sage
vegetable oil
Rub this mixture onto the turkey legs, and allow them to rest in it for an hour or so. Put them into the smoker at 225 degrees Fahrenheit, using a light flavored wood. Apple, pear, or cherry are good choices for a mellow smokey flavor.
Figure on four to six hours in the smoker. You want these to be fall-apart tender. The more connective tissue that melts, the more luscious these become. Remove them when done and let them rest and cool for half an hour. If any are left over, shred the meat for sandwiches. Yum!

Standard Thanksgiving fare, roast turkey, mashed potatoes w/giblet gravy (my part of meal prep), mashed yams w/walnuts and browned marshmallow topping - yum, cranberry relish, homemade dinner rolls, steamed broccoli w/hollandaise sauce (son's part of meal prep). For appetizers we'll have my new smoked trout & cream cheese spread w/crackers and a cheese and veggie tray. For desert, homemade pumpkin pie topped with french vanilla ice cream or whipped cream. All shared with my wife, mother, son, his finace' and her nephew. With a spread like that it's a good thing Thanksgiving only comes once a year!

prime rib mashed taters and gravy corn stuffing deviled eggs olives both green and black yams dinner rolls pie. OMG IM SOOOOOO FULL. My mother had us over for dinner I ate seconds then the food expanded I swear. My pants swole up on me and had to be unbuttoned even. Took a small nap and Im still miserable. I swore I wasnt gonna do this to myself. Happy Thanksgiving everyone. Hope your day was a good one.

Well, I just got up from a 2 hour nap. Every year I say that I'm NOT going to eat to the point that that I'm in a stupor. Somehow I just can't resist that one last bite. There is a restaurant in the family that closes to the public on the big holidays and has a potluck buffet for family, extended family, friends, and a few strays every year. We've been getting together this way for over 20 years. Great fun and a way to keep in touch with people that you only see once or twice a year.

Same here Dez. I had 1 plate yesterday and that was it, I was stuffed. Four hours later I had a small piece of both pumpkin and chocolate cream pie and I again felt stuffed. Since losing all the weight, I think my stomach is just much smaller so I’m not able to eat like I used to.
